The Spanish Royal Academy defines “innovation” as something which adds new features, but it also means returning that something to its previous state. In this session, leading winemaking professionals such as Almudena Alberca MW, María José López de Heredia (Viña Tondonia), Sara Pérez (Mas Martinet), Carlos Miguel Cerdán (Bodegas Cerrón) and Pilar Salillas (Lagravera) will be seeking the origin of wine through knowledge of ancestral varieties, acknowledgement of land, and ancient winemaking techniques.
