The life of a shokunin through edomae sushi

In Japan, a shokunin is a highly skilled artisan maestro bent on the perfection of technique. Jiménez will be applying this to his cuisine, sushi.

On the basis of techniques originally used to make sushi, chef Félix Jiménez will be delving into the entire ritual of this well-known Japanese fare. Jiménez will be telling us about the rice varieties that were used, the techniques during the Edo period to wood-cook rice etc. And tradition will bring us to the modern age, and how all this knowledge is applied these days, as Félix Jiménez reversions his recipes.

He will round this off with his approach to the Shokunin, a way of life working in an artisan profession, like a monk, a lifestyle with ties to Buddhism.
