As a chef above everything else, it comes as no surprise that Luis Alberto Lera gives priority to cooking. His way of life, but also his life.
Cookery as a priority is a summary of the philosophy of Lera, a restaurant which, although it does not depart from culinary disciplines such as cutting-edge or the naked product, attaches more importance to the actual process of cooking.
The man from Zamora will be talking about all this during Madrid Fusión, when he will also touch on the future of product restaurants if product becomes scarce, loses quality, or is even banned.
